Chocolate Chip Cinnamon Fudge Brownie Cupcake

Ingredients:
1c Flour
1c Unsweetened cocoa powder
4tsp Cinnamon powder
1tsp Baking powder
1/4tsp salt
2c Refined sugar
3 Eggs
1tsp Vanilla Extract
1/2c Mini chocolate chips

Makes: 15 cupcakes

Recipe:

  1. Pre-heat the oven at 175 degrees Celsius. Mix the flour, cocoa powder, cinnamon, baking powder, and salt in a bowl and set aside.
  2. Mix the sugar, eggs, and vanilla extract until well blended. Then gradually stir in the dry mixture into the bowl until well mixed.
  3. Note: You'll notice that the mixture is a little bit dry. That's because the original recipe that I found called for 1cup of apple sauce, but where the hell am I gonna find that without shredding my wallet. So instead as a last ditch effort, I used half a cup of milk. Now back then, I really didn't know what was gonna happen to it. Personally, I used soy milk, cos' that's the only milk I had available. So if you wanna do it my way, add half a cup of milk, cos' I haven't tried the apple sauce yet. Mix well. Haha. >_<
  4. Stir in the chocolate chips. Spoon quarter cups of batter into 15 paper-lined muffin/cupcake tins/molds [whatever. You know what those are. Haha.] 
  5. Bake for about 25 to less than 30min. I dunno. I only estimated the cooking time, because of the soy milk might hold to much liquid in it for the original 15min the original recipe called for. Just insert a toothpick to the center until it comes out... uhh... not batter I guess. Hahaha. :))
  6. Let it cool and dust confectioners sugar to finish it off.
